This granola is grain free and super delicious. You can eat it with warm nut milk for breakfast or with ice cream for dessert. It keeps for a couple of weeks in an airtight container.
5 cups of nuts and/or seeds (I used 1 cup each of sunflower seeds, hazelnuts, almonds, walnuts and macadamias – I chopped the larger nuts but you don’t have to)
1/4 cup coconut oil
2 tablespoons raw honey
1/4 teaspoon cinnamon
Mix all ingredients together in a bowl, spread on a large tray, and place in the oven until warm and toasty. I put my granola in the oven for 30 minutes at 120 degrees Celsius.
Don’t be afraid to change up the 5 cups of nuts/seeds. Chia seeds, bukinis (buckwheat groats), rolled oats, quinoa flakes or puffed amaranth and millet would work well. Other additions could be LSA, goji berries, cacao nibs and cacao powder. I’d love for you to share with us your favourite combo?
