Sweet Omelette

Lately I’ve been enjoying sweet omelettes for breakfast. I serve them with greek yoghurt and berries. If you enjoy my omelettes, you might like these other breakfast ideas – I share my favourite breakfast smoothie, egg, granola, porridge, pancake and chia pudding recipes.

Ingredients:

4 eggs
1 mashed banana
4 teaspoons chia seeds
4 teaspoons ground flax
1 teaspoon cinnamon
Coconut oil for frying

Method:

Mix eggs, banana, chia, flax and cinnamon until well combined. Fry batter in a little coconut oil over medium heat until cooked through. This recipe makes 4 sweet omelettes and serves 2.
