½ cup coconut flour
¼ cup  H2Coco coconut oil
¼ cup honey
½ teaspoon bicarb soda
4 eggs
¼ cup milk (I used almond milk)
Extra coconut oil for frying
1 cup frozen berries
3 tablespoons water
Pinch of vanilla powder

Combine coconut flour, coconut oil, honey, bicarb, eggs and milk in a bowl. Mix until well combined. Fry batter (makes 3 or 4 pancakes) in a little extra coconut oil over medium heat on both sides until cooked through. Meanwhile, place frozen berries, water and vanilla in a small pan over medium heat and simmer until the fruit has broken down and formed a berry sauce. Serve pancakes topped with berry sauce. This recipe serves 2 people.
