Homemade Trail Mix

This mix is super easy to make. I keep mine on hand for when I feel like a snack (I just grab a handful). I also top my smoothies, breakfast bowls, smoothie bowls, porridge, pancakes and chia pudding with it. If you don’t have all ingredients don’t stress – you can easily leave what you don’t have out or replace with another nut, seeds or dried fruit you may have.

Ingredients:

1/2 cup cacao nibs

1/2 cup goji berries

1/2 cup buckwheat groats

1/2 cup macadamias

1/2 cup almonds

1/2 cup brazil nuts

1/2 cup hazelnuts

Method:

Combine all ingredients in a bowl and mix together. Pour trail mix into an airtight container and store in the pantry. This mix keeps well for a couple of weeks. It makes 3.5 cups worth of trail mix – feel free to adjust quantities to suit. I prefer to roughly chop the nuts so it’s easier to ‘sprinkle’ over my breakfasts. If you’re short on time, you don’t have to. It’s easier to grab a handful and eat as a snack when the nuts are whole.
