These bliss balls are easy to make and are the perfect snack. Being healthy isn’t about restrictions, it’s about crowding out the bad stuff with good stuff. So crowd out all those processed snacks with these beauties. There is a good version of everything and a bad version of everything. My Goji Bliss Balls are a pretty damn good snack option. And let’s face it, we’re going to want snacks, there’s no denying it. Make sure you have some of these in the fridge and you’ll never stray.
1.5 cups nuts (I used pecans and almonds)
7 fresh dates pitted
1 tablespoon maca powder
1/3 cup raw cacao powder
1/4 teaspoon vanilla powder
1/4 cup goji berries
1 teaspoon bee pollen
1/4 cup raw cacao nibs
1/4 cup coconut oil
Process nuts, dates, maca powder, raw cacao powder and vanilla until well combined. Add goji berries, bee pollen, cacao nibs and coconut oil. Process on low speed until the mixture sticks together. If your mixture is too dry add more coconut oil, if it’s too wet add more nuts or some shredded coconut. Form into small balls and store in the fridge. You can roll the balls in raw cacao powder or coconut if you like. This recipe makes about 20 bliss balls.
