Woohoo! I finally made a dairy free quiche. Try it out and let me know if you love it too.
Ingredients:
6 eggs
½ cup almond milk (make your own almond milk here)
2 tomatoes diced
Handful spinach
2 medium mushrooms sliced thinly
1 small zucchini grated
1 small onion diced
¼ cup smoked salmon chopped
Pepper to taste
2 slices mountain bread
Method:
Line a quiche dish with the mountain bread. Mix all other ingredients in a bowl until combined. Pour into the quiche dish and bake in a moderate oven for 45 minutes. Enjoy. Serves 6.
If you’re gluten or grain free you can leave out the base. Also, the quiche recipe works well with any vegetables. I’ve used capsicum, kale and sweet potato before. If you’re not dairy free, feta is awesome too.

This is not dairy free if it has eggs in it. looks good but it’s not even a vegan recipe. I thought this was a none dairy vegan blog/site? Thank you

Hi Brenda. Dairy is from cows. Eggs are ok for non-dairy diet but not for vegan diet.
Dairy is a product of the mammary gland of mammals. Basically, it refers to milk and anything made from milk, like cheese, butter and yogurt. And eggs are not made from milk. They don’t even come from a milk-producing animal.
