Chocolate Pudding

Choc Pudding

This is a super decadent chocolate pudding recipe made using almond meal instead of flour. It is grain free, gluten free, dairy free and refined sugar free. If you’re vegan, you could try replacing the egg with a chia seed and water mixture. Simply combine 1 tablespoon ground chia seeds with 3 tablespoons water and stir for a few minutes until well combined to create a gel like consistency similar to a raw egg. I haven’t made the recipe using chia instead of egg, so let me know how it goes if you do!

Ingredients:

2 cups almond meal

1/2 cup cacao powder

4 tablespoons maple syrup

1 tablespoon coconut oil

1 egg

1 teaspoon baking powder

1 teaspoon vanilla powder

Method:

Combine all ingredients in a bowl and mix until well combined. Pour into a small baking dish. Bake at 160 degrees Celsius for 30 minutes. Serve warm with fresh berries!
