Chia puddings are the greatest invention ever. Did you know that when you soak chia seeds in liquid they absorb the liquid to form a gel-like pudding consistency? All you need to do is add flavour and you have yourself an instant healthy pudding dessert or snack.
Chia is an ancient seed and is a great source of Omega 3, dietary fibre, protein and antioxidants. Sprinkle chia on your breakfasts and salads for extra nutrients – just remember to drink plenty of water afterwards because as I said before, chia seeds soak up any liquid they come into contact with. It doesn’t matter if it’s in your belly or in a bowl being made into chia pudding.
4 tablespoons chia seeds
1/3 cup almond milk – make your own almond milk here
1 tablespoon raw cacao powder
1 tablespoon goji berries
1 tablespoon shredded coconut
1 teaspoon cinnamon
1 tablespoon raw honey
1 tablespoon cacao nibs
Combine all ingredients except cacao nibs in a bowl, cup, mug or jar and stir until well combined and the chia seeds soak up the almond milk liquid and form a pudding-like consistency. This takes a couple of minutes. Sprinkle the pudding with cacao nibs and extra shredded coconut. Enjoy.
This recipe makes 1 chia pudding. You can refrigerate it overnight ready for a delicious breakfast the next morning or enjoy straight away as an after dinner dessert or snack.
