I’ve been craving this delicious breakfast bowl since I made it last weekend. It’s absolutely perfect on a hot summer morning. If you only blend it until it’s just combined it stays nice and icy cold. This recipe serves 2 people.
2 frozen acai bricks
Handful of frozen berries (I used strawberries)
All the meat and half the water from 1 young coconut
Honey to taste (I used 2 teaspoons)
3 tablespoons raw cacao powder (can leave this out if you want the full berry taste and no chocolate)
1 kiwi fruit sliced
Handful of blueberries
2 tablespoons shredded coconut
2 tablespoons activated buckwheat
Process acai, frozen berries, banana, mango, coconut meat and water, honey and raw cacao powder until smooth. Pour into 2 bowls and top with kiwi fruit, blueberries, shredded coconut and buckwheat. Other topping options are nuts, bee pollen, goji berries, cacao nibs, muesli, LSA and fresh fruit.
