This breakfast bowl is easy to make, full of goodness and looks delicious and colourful.
1 orange peeled and chopped
1 kiwi fruit peeled and chopped
2 bananas peeled and chopped
2 figs chopped
2 tablespoons goji berries
4 tablespoons soaked chia seeds
½ cup almonds
2 teaspoons bee pollen
2 teaspoons cinnamon
2 tablespoons LSA
Yoghurt (coconut or greek etc)
Combine orange, kiwi fruit, bananas, figs, goji berries, chia seeds, almonds, bee pollen and cinnamon. Divide evenly into two bowls. Spoon yoghurt on top and sprinkle with LSA. Serve.
Feel free to substitute or leave out particular fruits, nuts and seeds depending on availability and the season. Experiment by adding different superfoods to boost the nutritional value of this dish.
Note: I soak my chia seeds (3 tablespoons of chia in 1 cup of water) overnight. In the morning they are a lovely gooey consistency. Chia seeks absorb A LOT of water. I would much rather they absorb water overnight in the fridge than make me dehydrated by absorbing the water inside me. It’s your choice though, you may prefer them crunchy. In this case, please halve the amount of chia and follow your breakfast with a large glass of water and continue to hydrate throughout the day.
