Apple and Cinnamon Muffins

Apple and Cinnamon Muffins


2 cups SR flour (I used spelt SR flour)
1 egg
¾ cup milk (I used almond milk)
½ cup coconut oil
1 teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon vanilla powder
¾ cup chopped walnuts
3 green apples grated
½ cup honey


Combine all ingredients in a bowl. Mix well until combined. Divide mixture into a 12 hole muffins tray. Bake at 180 degrees Celsius for 20 minutes or until golden brown. Enjoy!
