Anzac biscuits are an Aussie favourite. Here is my version (minus the refined sugar, and gluten – if you use gluten free flour!).
1 1/4 cups self raising flour (wholemeal, spelt or gluten free)
1 cup shredded coconut
1 cup oats
1/2 cup honey
1 teaspoon baking soda dissolved in 2 tablespoons boiling water
In a saucepan, heat the butter, honey and baking soda over medium heat until melted – stir frequently. Take off the heat to cool for a few minutes. In a bowl, mix flour, coconut and oats. Make a well in the centre of the flour mixture and pour in hot honey/butter mixture. Mix well until combined. Roll mixture into balls and press onto a lined tray. This recipe makes approximately 24 biscuits. Bake at 180 degrees Celsius for 12 minutes.
