Vegetables (and fruit) are some of the most nutrient dense foods on the planet. Studies have shown that most of the population do not consume the recommended amount of fruit and vegetables each day. So I’m sharing my top 12 tips to increase your fruit and vegetable intake:
Pack them into smoothies – hide your fruit and vegetables in smoothies. My favourite smoothie recipe is my Minty Fresh Green Smoothie.
Hide vegetables in savoury dishes – simply grate or finely chop carrot, zucchini, capsicum, spinach, etc and hide in fritattas and pasta sauces. You can find my frittata recipe here.
Pack vegetables into sweet dishes – my absolute favourite way to do this is to hide zucchini in chocolate brownies. You can take a look at my recipe here.
Cut them up and eat them with dips and cheese – simply swap your usual crackers with cut cup carrots, celery, broccoli and capsicum.
Store pre-cut fruit and vegetables – wash and cut your fruit and vegetables and store them in the fridge. This way they’re ready to go and there’s no excuses.
Leave fruit and vegetables on the bench – this means that they’re in eye sight so it will act as a daily reminder to eat as snacks and with your meals.
Invest in a juicer – you can increase your fruit and vegetable intake by enjoying a juice each day. Take a look at my favourite green juice recipe here.
Make fruit ice-cream – swap your regular ice-cream for fruit ice-cream. Simply freeze a banana and some berries and blend with a little coconut cream to make a delicious treat. This is my favourite fruit ice-cream recipe.
Use zucchini, eggplant or pumpkin in place of lasagne sheets – simply thinly slice zucchini, eggplant or pumpkin and use instead of wheat based lasagne sheets in your favourite lasagne recipe.
Swap wheat pizza base for a cauliflower pizza base – pizza bases made from cauliflower are extremely popular at the moment because some people struggle to digest gluten (the protein found in wheat).
Swap wheat pasta for zucchini pasta – use a spiralizer (or slice thin zucchini strips with a knife) and top with your favourite pasta sauce. Pesto sauce works wells.
Eat your chocolate with fruit – make a pact with yourself that if you’re going to enjoy some chocolate you have to have a piece of fruit at the same time.
